Billy Joel might've exited the recording booth nearly 20 years ago, but his studio spirit has been picked up — and laid down — by a new generation of artists. Ben Folds unleashes a finger-tangling display of pianistic prowess as he croons out his credo (without the benefit of a single guitar) in "Philosophy." Jamie Cullum guts "Catch the Sun" of its Manchester melancholy and transports it to a, well, sunnier place, trading the Doves' fuzzed-out sonic wash for a Steinway-sparked spruce-up.
